There's a lot of ink being spilled over Pinot Gris at the moment, about where it should be grown, what style we should be making, etc. No such confusion exists at Fairhall Downs: their Pinot Gris is an unashamedly full-on, rich style of wine, graced with haunting, deeply-scented aromatics of ginger and pear and a voluptuous, peach-flavoured, mouthfilling silken texture. Hand-harvested from low yielding vines, the concentration is extraordinary; the decision to ferment some of that perfect fruit in older French oak and give it a lick with a stick on the lees has been rewarded by deep complexity and a biscuity richness.
